We're excited that ibs.isabel has been busy baking with our chocolate, and has created her very own gluten and lactose free Vanilla, Coffee and Chocolate Marble Cake! 
Ingredients: 
Cake Batter Base:
  • 225g Butter
  • 225g Caster Sugar
  • 4 Eggs
  • 225g Gluten Free Self-Raising Flour
  • 1tsp Baking Powder
  • 1/4tsp Xanthan Gum

Vanilla Sponge:
  • 1tsp Vanilla Extract

Coffee Sponge:
  • 2tsp Coffee Granuals Dissolved in 20ml Water

Chocolate Sponge:
  • 15g Cocoa Powder
  • 1tsp Lactose Free Milk

Dark Chocolate Buttercream:
  • 50g Icing Sugar
  • 50g Butter
  • 50g Enjoy 70% Dark Chocolate

 

Method: 

  1. Preheat the oven to 160 degrees fan/ 180 degrees/ 350 Fahrenheit and line and grease two 20cm cake tins.
  2. Soften the butter in the microwave and mix with the sugar until pale and fluffy.
  3. Mix in your eggs one at a time fully combining each time.
  4. Mix in your GF flour, baking powder and xanthan gum until combined and a batter is formed.
  5. Split the batter into 3 bowls and mix in vanilla extract to one, dissolved coffee to another and cocoa powder to the final one.
  6. Dollop the different mixtures into the cake tins randomly. Then to create the marble effect, run a skewer through the mixtures in the cake tins, be careful not to over mix them, you still want to keep the definition in colours between the batters!
  7. Bake for 17-20 minutes until a skewer comes out clean when inserted into the centre of the sponges and leave to cool.
  8. Now make the dark chocolate buttercream by breaking Enjoy 70% Dark Chocolate into pieces and and placing into a heatproof bowl onto of a saucepan of gently boiling water, heat until melted, stirring occasionally. Once fully melted, set aside to cool.
  9. Soften the butter in the microwave and mix with the icing sugar. Until pale and smooth.
  10. Add the melted, cooled Enjoy 70% Dark Chocolate and beat until fully combined.
  11. When the cake sponges are cool, remove from the tin and spread all of the Enjoy 70% Dark Chocolate buttercream onto one of the layers, then place the other sponge layer onto.
  12. Dig in and enjoy!
