Looking for a 'healthy' sweet treat? Look no further than these fab cookies, courtesy of @nicoletta_mikela

 

Ingredients: 

  • 2 bars of Enjoy salted caramel chocolate 
  • 230g coconut sugar 
  • 80g vegan or plant based butter 
  • 280g gluten free flour
  • 2 tablespoons of milk 
  • 2 tablespoons of almond butter
  • pinch of salt 

 

Method: 

  1. Preheat oven to 160 fan 
  2. Melt butter, sugar and almond butter whisk to combine then add in flour, milk and a pinch of salt mix again till a dough like texture. Chop up enjoy chocolate into small pieces slowly mix in
  3. Scoop around 10-12 spoons of cookie mixture on a lined oven proof baking tray evenly spread out and bake for 15 minutes 
  4. Leave to cool for around 10 minutes and enjoy!
