We're back with another fab recipe from ibs.isabel, this time making some delicious looking, gluten and lactose free, Black Forest Brownie Cookies! 
Ingredients: 
Wet Mixture:
  • 126g Gluten Free Plain Flour
  • 30g Cocoa Powder
  • 1tsp Baking Powder
  • 1/4tsp Xanthan Gum
  • 1/8tsp Salt

Dry Mixture:
  • 200g Enjoy 70% Dark Chocolate
  • 123g Butter
  • 150g Caster Sugar
  • 100g Light Brown Sugar
  • 2 Eggs
  • 100g Dried Sour Cherries
  • 75g Enjoy 70% Dark Chocolate (Chopped into small chunks)
  • 75g Dairy Free White Chocolate Chips
  • 1-2tsp Lactose Free Milk

 

Method: 

  1. Preheat the oven to 160 degrees fan/ 180 degrees/ 350 Fahrenheit and line two baking trays.
  2. Break 200g of Enjoy 70% Dark Chocolate into smaller pieces into a heatproof bowl along with the butter. Place the bowl onto of a saucepan of gently boiling water and heat until melted, stirring occasionally.
  3. In a large bowl, whisk both the sugars with the eggs together for 5-6 minutes so the mixture becomes pale and shiny.
  4. Immediately pour in your melted chocolate mixture and continue to whisk on a low speed until fully combined.
  5. Mix in your dry ingredients until just combined, avoid over-mixing!
  6. Mix in the chopped up 75g Enjoy 70% Dark Chocolate, DF white chocolate chips and the sour cherries.
  7. If the mixture is too thick add some LF milk gradually until you get a batter-like consistency.
  8. Spoon balls of mixture onto your trays (remember to leave space for them to spread), and smooth their tops.
  9. Bake for 10-12 minutes depending on how gooey you want them and allow to cool.
  10. Dig in and enjoy!
