Chocolate Mint Mousse

Delicious Vegan chocolate mousse recipe sent to us from @Plantbased_kat, an Instagram fan of our chocolate.

1 cup of aquafaba (1 can of chickpeas)
200g of Enjoy! mint chocolate
Optional: 1 tbsp of Enjoy! cocoa drink powder


Melt the mint chocolate either in a microwave or in a water bath. Don’t rush it, so the chocolate doesn’t burn especially in the microwave. Short intervals are better than one long one. Set aside once the chocolate is completely melted.

Open your can of chickpeas and drain the chickpea water into a bowl. 

Use electric egg whisk and beat the chickpea water until stiff peaks form. 
Once the aquafaba doesn’t move at all you know it’s ready. It usually takes around 15 minutes!

Check if the chocolate cooled down a little bit and then start slowing folding the chocolate into whipped aquafaba. If the chocolate is too hot the whipped aquafaba could collapse. 

Optional: Add 1 tbsp of cocoa drink powder for more chocolate taste 

Put into 4 glasses and refrigerate for at least 2 hours for the mousse to set. 
Once it’s all set you can decorate the mousse with any toppings you like. I would recommend coconut flakes or raspberries.
